All the wikis in the "big wiki" categories (MoreThan20000, MoreThan50000, etc) as of my signing of this have also been categorized by age of founding. If you want to contribute to this effort: (1) start with MoreThan10000, (2) do the whole thing, and (3) make a note of it here :-)
