This is a list of wikis by backup status. It can include wikis listed in Category:All, and will display the top 5000 wikis, with further results available from the link at the foot of the table.
If you want to backup a wiki, you can use WikiTeam tools from the Archive Team. There is a tutorial available and a mailing list for questions.
